Gluten Free Cinnamon Almond Christmas Cookies with Millets and with No Refined Sugar

INGREDIENTS

1/2 cup millet (100g)
1 cup ground almonds (100g)
1/2 teaspoon cinnamon
pinch of bicarbonate of soda
pinch of sea salt
3 tablespoons olive oil
3 tablespoons maple syrup or coconut sugar
1 teaspoon vanilla essence
1 teaspoon lemon juice
Optional: Food coloring for decoration

METHOD

Preheat the oven to 350 Fahrenheit (180°C, 160°C fan). Line a  baking sheet with baking paper. Place millet into high speed blender and blend until you have more less flour like consistency. In a large bowl whisk together millet flour, ground almonds, cinnamon, soda and salt. In a small bowl whisk olive oil with maple syrup, vanilla and lemon juice and pour over the dry mix. Mix everything together to form a dough. Leave to stand for 10 min.

With your hands form about 16 small balls with a mixture and place onto lined baking sheet. Flatten gently with palm of your hand. Use cookie cutters in the form of snowflakes, gingerbread men, and Christmas trees to add to the season's spirit. Decorate (Optional): If desired, add festive food coloring to tint the dough. Bake for about 15 minutes until light golden brown.

Gluten Free Rum and Raisin Christmas Cookies with No Refined Sugar

INGREDIENTS  

2 1/2 cups almond flour (or ground almonds)
1/2 cup butter (melted)
1/3 cup honey or maple syrup
2 tsps vanilla essence
1 tbsp ground cinnamon
1/2 cup raisins (optional – rum soaked raisins)
1/4 tsp bicarbonate of soda
Optional: Food coloring for decoration

METHOD

Preheat the oven to 180C (350F) and line a baking tray with parchment (greaseproof) paper. Melt the butter and add to almond flour and honey/maple syrup in a mixing bowl. Add the vanilla essence, rum (if using) the cinnamon and raisins and mix well until everything is
combined. Add the bicarbonate of soda and mix well once more. Split the mixture into 12 evenly sized pieces and roll into balls. Place on the lined baking tray and press down to flatten them to about 1cm thick. Use cookie cutters in the form of snowflakes, gingerbread men, and Christmas trees to add to the season's spirit.  Decorate (Optional): If desired, add festive food coloring to tint the dough. Bake in the oven for about 8 mins -check them every so often so that they don't get too brown. Once they have turned golden brown flip them over (carefully as they will be quite soft) so the other side gets a bit of colour they crisp up a bit (5-6 mins on the other side should do it). Remove from the oven and allow to cool slightly so that they set firm.
